Alcohol - 13.5%Case Production - 552 cases

Vinification and Elevage - The fruit is hand harvested and brought to the winery where it is destemmed and fermented in large open top fermenters by using only native yeast for fermentation. The grapes are then pressed into neutral French oak barrels to age for 16 months.

Cabernet Sauvignon

The world’s most popular red wine grape is a natural cross between Cabernet Franc and Sauvignon Blanc from Bordeaux, France. Cabernet Sauvignon is loved for its high concentration and age worthiness. Black cherry, black current, graphite, baking spices and cedar are all commonly recognizable in cabernet. Outside of Bordeaux, Napa Valley is perhaps the most famous and respected growing region for cabernet sauvignon world wide. The rich flavor and high tannin content in Cabernet Sauvignon make it a perfect partner to rich grilled meats, peppery sauces, and dishes with high flavor.
