Winemaker - José Luís Santos Lima Oliveira da Silva

Appellation - Lisboa, Portugal

Alcohol - 13.5%

Vinification and Elevage - Previously destemmed the grapes went through a low temperature pre-fermentative maceration for 24 hours. The alcoholic fermentation is done in stainless steel vats with temperature control between 26º - 28ºC, for 14 days. Skin contact maceration with (submerged) cap for 28 days. Partial ageing in oak barrels.

Syrah

Syrah, Touriga Francesca, Tinta Roriz, Castelao

A rich, powerful, and sometimes meaty red wine that originated in the Rhône Valley of France. Syrah is the most planted grape of Australia, where they call it Shiraz. In 1999, Syrah was found to be the offspring of two obscure grapes from southeastern France, Dureza and Mondeuse Blanche. Syrah is increasingly popular in California where it is produced across the state but most notably on the central coast. It thrives in both warm and cool climates. Producing very different styles in each climate. Syrah can have both a meaty and vegetal quality making it very versatile for food pairing.
