Vinification and Elevage - Sourced from 20-year-old vines planted using the VSP (vertical shoot positioning) trellis design on deep fertile red loam over red clay soils with drip irrigation installed on each vine row. Vineyard yield is 2.5 tons per acre or n each vine row. The wine is matured on French oak in a variety of vessels for a period of 12 months.

Syrah

Shiraz 40%, Cabernet Sauvignon 36%, Merlot 24%

A rich, powerful, and sometimes meaty red wine that originated in the Rhône Valley of France. Syrah is the most planted grape of Australia, where they call it Shiraz. In 1999, Syrah was found to be the offspring of two obscure grapes from southeastern France, Dureza and Mondeuse Blanche. Syrah is increasingly popular in California where it is produced across the state but most notably on the central coast. It thrives in both warm and cool climates. Producing very different styles in each climate. Syrah can have both a meaty and vegetal quality making it very versatile for food pairing.
