Fermentation/Winemaking - This wine was sourced from three different Santa Ynez Valley sites which were fermented and aged separately. Each fermentation included a small portion of whole bunches and were gently handled during the fermentation process. Aging was done exclusively in neutral oak for 12 months. Both primary and malolactic fermentations started
spontaneously. During the spring the wine was gently racked and blended. It then went back to barrel where it rested until bottling without fining or filtration.
Cabernet Franc is one of the major black grape varieties worldwide. It is principally grown for blending with Cabernet Sauvignon and Merlot in the Bordeaux style, but can also be vinified alone. Cabernet Franc is most easily ecognizable for its peppery yet vegetal flavor profile. Many experts refer to tasting jalapenõ as a tell tale indicator of cabernet franc. California's central coast has begun to produce a wide variety of lauded single varietal cabernet franc vintages. in recent years. Cabernet Franc is the parent grape of both Merlot and Cabernet Sauvignon.
