Winemaker -  Samantha Sheehan Appellation - Red Hills AVA (Cab Sauv) and Coombsville, Napa AVA (Cab Franc), California

Case Production -  n/a

Vinification and Elevage - Fermented in stainless steel tanks using native yeast at about 85 degrees. The wine sits on the skins for an extra 10 days after fermentation is complete, after which the wine goes into neutral French oak. Aged in barrel for 16 months prior to bottling.

Aging: 10 months, (10% new French oak, 90% neutral French oak)

95% Cabernet Sauvignon and 5% Cabernet Franc

The world’s most popular red wine grape is a natural cross between Cabernet Franc and Sauvignon Blanc from Bordeaux, France. Cabernet Sauvignon is loved for its high concentration and age worthiness. Black cherry, black current, graphite, baking spices and cedar are all commonly recognizable in cabernet. Outside of Bordeaux, Napa Valley is perhaps the most famous and respected growing region for cabernet sauvignon world wide. The rich flavor and high tannin content in Cabernet Sauvignon make it a perfect partner to rich grilled meats, peppery sauces, and dishes with high flavor.
